Chocolate Chip Pound Cake Mini Loaves #goodcookcom #goodcookbloggers #SweetCreations

This time of year always make me think of friends, family, and FOOD!  Not just any food, but my favorite would have to be desserts.  I have made in the past a regular sized chocolate chip pound cake, and since my friends at Good Cook have sent me a Sweet Creations Mini Loaf Pan I have decided to try it out on a smaller scale.

The ingredients needed for this recipe are:

  • 1 1/4 cup cake flour 
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 cup unsalted butter
  • 1 cup sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips



First you need to preheat your oven to 350 degrees F.


In a large bowl sift the flour, salt, and baking powder.



In your next bowl mix the butter and sugar...gradually add one egg at a time mixing well in between each egg.



Add your vanilla, then add the flour mixture.  I don't own an electric mixer, so I enlisted my hubby!



Last step don't forget the chocolate chips!!!

Carefully add the batter to your greased Sweet Creations Mini Loaf Pan, then bake for 40-50 minutes until golden brown.




I popped the mini loaves into the oven, and wait patiently!



They might not be the prettiest mini loaves ever made, but they are delicious!  Hey I never said I was the best baker, but I am learning!

I loved the convenience of the pan for a Sunday dessert, but I definitely would love to order a larger pan so I can make more at a time.
