Winn-Dixie Holiday Recipes to Impress e-Book: Celebrate your Local Flavor Holiday Recipes! #WDLocalHoliday

December would have to be my family's favorite time of the year.  Not just because of the holidays and family time, but the FOOD brings our family together the most.

My family is from Cuba, and usually we roast a pig in La Caja China for special occasions.  This year my family was super busy with my son being an active toddler, and my grandparents needing more help that I decided to bake a new holiday recipe of Cajun turkey with Cajun vegetables.

I made my list and headed to my local Winn Dixie to buy the ingredients.

For the vegetables I purchased:

  • 1 Small bag of carrots
  • 1 Large onion
  • 2 Green peppers
  • 1 Bag of small potatoes
  • 1 Bag of celery

I chopped all of the vegetables except the baby carrots, and mixed them in a bowl.

The next thing I did was make the cajun seasoning from scratch....no premixed seasoning here!!!

Spices that I used were:
  • 2 Tsp. Paprika
  • 2 Tsp. Cayenne (add more if you want extra hot!)
  • 2 Tsp. Oregano
  • 1 Tsp. Garlic powder
  • 1 Tsp. Onion powder
  • 1 Tsp. Salt
  • 1 Tsp. Pepper
I took a 1/2 cup of Extra Virgin Olive Oil, and mixed in all the spices.  I then took my flavor injector, and injected the homemade marinade into different areas of the turkey.  I then took a marinade brush and coated the turkey in even more of the spicy deliciousness!

Before popping the turkey into the oven, I took 1/4 of the vegetables and put them inside the turkey instead of stuffing. The rest of the vegetables I put around the turkey so they would soak up all of the juices.

This is what it looks like before going into the oven.

This is how fantastic it looks when it is done!
